Several years ago I started making Cinnamon Glazed Pecans to give to my kids teachers. Now...I should probably tell you..I don't really like pecans so it is weird that I would decide to make these to give away...huh? But they are so easy! And I must admit, I LOVE THEM!! My husband and kids..eat them like candy! So I am passing this along to you to try. My kids teachers from previous years catch me in the hall and ask if they will still get pecans even though my kids aren't in their class this year? Shh...but a few of them do...little secret!! Now...if you are looking for a healthy idea...this isn't so much because of all the sugar, but it's not as bad as some things out there right now. And it is a little pricey to buy the pecans. You can find them locally and save some that way.
Cinnamon Glazed Pecans
2 lbs. Pecans
1 egg white, lightly beaten
1 cup sugar
1 cup brown sugar
2 TB Cinnamon
1/2 t. salt
Mix pecans & egg whites thoroughly in a large mixing bowl. Combine remaining ingredients together and add to pecans. Toss well evenly coated.
Place on 2 cookie sheets covered with parchment paper. I lightly spray cooking spray on top of the pecans..this helps the sugar stick to the pecans while cooking. Bake @ 325 degrees for 20-25 minutes. Let the pecans cool for 10 minutes and then stir them.
I place them in cute little bags to give to their teachers along with a gift card from somewhere around here.
As a teacher myself...I love simple gifts so I try to keep mine simple too! I also like to get their Sunday School teachers or small group leader something too...they all work hard at helping educate my children and I appreciate it because I definitely couldn't do it without their help! I wish I could do more, they so deserve it!
